In my last blog, 'Preparing for a Healthy Christmas' I mentioned sharing the load. You may not be the one hosting the Christmas celebration in your family but someone you love will be. I'm sure you would love to help so not just one or two people are doing all the preparation. We often hear sayings like 'sharing is caring', 'many hands make light work' and I totally agree but it's not always that easy.
Not everyone is a whiz in the kitchen or even likes baking and cooking. Sometimes we compare our cooking with others. Their dish looks like it's come from a fancy restaurant and the plate is so beautifully garnished (just think how clever you are at all those other things, cooking is their forte and maybe not yours). If this is you, and wondering how you can help I've created a few easy no-bake, no-fuss, quick and easy healthy treats. Perfect for you to take along when visiting family or friends over the holiday season.
For two of the recipes I've used a food process to grind down the nuts, seeds and coconut or you can also use a variable speed blender or a Thermomix. The other is as simple as melting some good quality chocolate and decorating with your choice of nuts, seeds and dried fruit. All the recipes can be made up to 2 weeks beforehand and stored in airtight containers in the fridge or they can be frozen for up to 8 weeks. You can have these no-bake recipes prepared well in advance and ready to take a plate of goodies to share the load when visiting family and friends this season.
These yummy Christmas Balls are flavoured with tangy and sweet dried cranberries and a hint of festive spices. They deliver a big healthy dose of antioxidants. Dried organic cranberries contain the same nutrients as fresh, however commercially dried cranberries with sugar added, reduces the vitamins.
Ingredients: 2 cups cashews, 1 1/2 cups coconut, 2 tsp cinnamon and mixed spice, 1/4 tsp Himalayan salt, 3 Tbsp coconut oil, 2 Tbsp maple syrup, 1 1/2 tsp almond extract, 150g organic dried cranberries and a little melted chocolate to decorate..... TO READ THE WHOLE RECIPE click here.
Lemon zest makes these protein dense balls a refreshing, not too sweet snack. They aren't just for the festive season, eat them any time of the year. Perfect to keep blood sugar levels balanced and prevent those sweet cravings we sometimes get.
Ingredients: 1 cup almonds, 1/2 cup coconut, 1/2 cup pumpkin seeds,1/4 cup sunflower seeds, 1/4 tsp Himalayan salt, 3 Tbsp coconut oil, 3 Tbsp lemon zest, 2 Tbsp lemon juice, 1 1/2 Tbsp honey, 1 1/2 tsp vanilla extract and coconut to roll the balls in.... TO READ THE WHOLE RECIPE click here.
These Chocolate Buttons are a perfect no-bake, no-fuss healthy treat. They can be made in minutes, then put aside to set in the fridge or freezer. No stress here, just a colourful simple treat to share over the holiday season.
